Gyoza have become very popular in restaurants across the globe. These fried dumplings are often filled with meats and vegetables and served with a soy-vinegar dipping sauce. With a chewier, thicker skin than a wonton, gyoza is a variant of the popular Chinese potsticker. Utsunomiya, capital city of the Tochigi Prefecture, is in fact famous for its gyoza, featuring over 200 restaurants that serve the popular dish.
Utsunomiya
The highlight is a visit to the huge underground space at the Ohya-ishi Quarry Ruins. Enjoy some "Utsunomiya Gyoza," a lip smacking good treat.
Hamamatsu
Japan's City of Music, and a manufacturing town as well; an urban area with both mountains and the sea. "Hamamatsu Gyoza" is famous for its richness of vegetables.
